Mamma Mia – What a Pizza!

My favourite cuisine is Italian – without any doubt! I’ve been to Italy many times and fell in love with the food they serve. It is hard to find a perfect recipe for a pizza, though. Home-made pizza will never be as good as the one from the restaurant, unless someone has wood-fired oven. Well, I’ve tried a lot of recipes and I might have found the perfect one. The dough is crispy and super tasty, thus it’s worth doing. But, just remember, don’t put pineapple on top unless you want to piss Italians off. This recipe is for one big fluffy pizza or two medium thin ones.

Ingredients:

  • 40g of fresh yeast, instant ones should work too (25g fresh= 7g instant)
  • 600 g of flour, the best one is type “00”, you can find it in most shops; you might use any other type of white flour like “450” or “550” but the dough will not be as delicious and crispy
  • One teaspoon of salt
  • 1,5 glass of warm water (about 36-38 degrees), you might have to add some more while kneading the dough
  • Any toppings you like

Equipment:

  • Oven tray

Instructions:

  1. Crumble yeast into small pieces, add 5 spoons of water and mix until the yeast dissolves
  2. Sift the flour into a bowl, add salt and dissolved yeast and knead together using hands
  3. Start pouring water slowly while kneading
  4. Knead the dough until it becomes elastic (5-10min), don’t worry if it’s sticky – it’s completely fine even if it sticks to your hands
  5. Put the dough into a big bowl and cover it with a cloth
  6. Leave in a warm place for at least 2 hours, I kept it for 4 hours (I had to put the dough into a bigger bowl after 2 hours as it grew too much)
  7. Preheat an oven into the highest temperature possible (up/down), I had the oven set to 280 degrees
  8. Put the dough onto oven tray and stretch so it covers the whole surface, remember to make the sides thicker than the middle
  9. Place the toppings on top of it, starting with sauce – I used tomato puree from the jar; I placed some mozzarella and chilli peppers on top before putting the pizza in the oven
  10. Put the pizza at the very bottom of the oven
  11. If your oven has 280 temperature, then you will need to keep your pizza inside for about 5 minutes; the lower the temperature is, the longer you have to keep your pizza inside. It is best if you check the dough meanwhile; if it comes off the tray easily, then it will be probably ready!
  12. Place any other toppings you have
