Racuchy – cripsy, fluffy, golden goodies

I am a big fan of healthy food, but sometimes I feel like eating a cheat meal. But even when I decide to eat something not so healthy, I prefer to make it myself rather than to buy some rubbish food in the supermarket. Racuchy are awesomely tasty and easy to make. What’s more, there are so many options how you can serve it so you can’t go wrong with it; add some fruits, ice cream or just powdered sugar. You will not believe how quickly they disappear. I’ve never had a chance to eat them the next day – it says it all!

INGREDIENTS:

  • 30g of fresh yeast or 15g of instant ones
  • 450g of wheat flour
  • Pinch of salt
  • 1 spoon of sugar
  • 1,5 glass of warm milk (36-38 degrees)
  • 1 egg
  • Sunflower oil

EQUIPMENT:

  • Large frying pan to fry racuchy quicker, but a small one will work too

INSTRUCTIONS:

  1. Sift the flour into a bowl, add a pinch of salt, mix and make a hole in the middle
  2. *If you use instant yeast, mix flour, salt, sugar, an egg, milk and yeast altogether, and go to point 5
  3. Crumble fresh yeast into the hole, cover it with a spoon of sugar, pour ½ glass of warm milk onto it but don’t mix it yet; cover it with a cloth, set the bowl aside in a warm place and wait for 15 minutes
  4. When leaven is grown, add an egg and pour a glass of milk
  5. Mix it all together; the dough can’t be too thick nor too batter, so add milk or flour accordingly if needed
  6. Cover the bowl with a cloth and set aside in a warm place for about 1 hour, it has to double its size
  7. Prepare a glass of hot water to dip a spoon, so the dough doesn’t stick to it
  8. Scoop the dough with a spoon, put on the frying pan in shape of your choice
  9. Fry in hot oil until both sides are brown-ish (4-6 minutes for each side)
  10. Repeat until all dough is used
  11. Serve with anything you like, I sprinkled racuchy with powdered sugar
  12. Enjoy!
