Mac’n’Cheese

Reader’s submission

One of my favourite food is cheese; I love pasta, too, so Mac’n’Cheese is the love of my life! Macaroni and Cheese is thought to be comfort food in the US, but it has its origins in England. It’s really popular in States and my friends love it, so I knew I had to try it. Well, it was love at first sight – or should I say at first taste?

Here is the recipe I always go for – it’s simple and extremely tasty. It’s great if you are a student, as it’s simple, quick and cheap.

Ingredients:

  • 500g of pasta
  • 400g of cheddar cheese
  • 150g of butter
  • 300ml of milk
  • 200ml of double cream
  • 1 glass of flour
  • 1 glass of breadcrumbs
  • pinch of salt
  • 1 teaspoon of cayenne pepper (add more if you like spicy food) –
  • 2 spoons of dijon mustard
  • chilli peppers*
  • you can add meat if you like*

Instructions:

  1. Cook pasta, it should be soft when cooked
  2. Melt butter in a pot; add flour while mixing, the sauce should be quite thick
  3. Add milk and cream to it and heat it while stirring
  4. Add salt, cayenne and dijon mustard (and any extras you like, e.g. meat)
  5. Turn off the gas when the milk is hot and begins to thicken
  6. Add almost all the cheese, leave handful for later
  7. When the cheese melts, add cooked pasta and stir
  8. Put everything in a pan, sprinkle it with cheese and breadcrumbs
  9. Bake as long as you wish – when the cheese melts and turns gold-ish on the top, you can take it out
  10. Enjoy!
