Emergency meal – Eggs ‘n Rice

Here’s how you make a meal that costs close to nothing. Very simple, very basic, quite all rice, pun intended.

If you don’t have some frozen rosół (chicken stew), try to find some palm oil free bouillon cubes. Or just use water, it’ll still be fine. Vegetables are very much welcome here, but you might find yourself not having anything other than half an onion and some garlic (like myself tonight), and that’s fine. We can still do it!

Note: this is not a meal to impress. This is a meal to survive.

Another note: Ketchup. Every day, ketchup saves hundreds of meals around the world. It can also save yours. An ancient Polish proverb says: “You can’t eat a shoe; not without ketchup”.

Ingredients:

  • A cup of rice (approx. 180g)
  • Two eggs
  • Half an onion
  • A clove of garlic (but we all know it’s gonna be two ;))
  • A tablespoon of olive oil
  • 450ml of broth (bouillon)
  • Optional vegetables: a carrot, a tomato, a bell pepper
  • Salt, pepper and coriander (optional – also, coriander seeds is not the same as the grown plant)
  • Ketchup – if all should fail

Instructions: 

  1. Pour the olive oil onto the pan and heat it up
  2. Dice the onion and garlic and throw it on the pan
  3. Now is the time for optional vegetables. If you have them, fry them as well
  4. Rinse the rice and add it to the pan
  5. Keep it there for about 5 minutes, so that the rice gets some colour
  6. Prepare your broth (either dissolve the cube in 450ml of boiling water, or heat up the frozen one) and pour it into the pan
  7. Stir the mix (carefully), and cover the pan. If you broke your lid like I did, use aluminium foil
  8. Reduce the heat, it should be really small. Just enough to keep it boiling
  9. Stir every 5-10min, so that it doesn’t stick to the bottom
  10. After about 20-25minutes all the liquid should be absorbed by rice
  11. Mix the eggs in a bowl with a fork and pour it onto the pan
  12. Stir everything and DO NOT increase the heat. It’s warm enough to cook the egg, so keep the heat low
  13. Season with salt, pepper, and coriander if you have some
  14. Good job! You will not starve!
